Lemon Lime Cupcakes
Today we decided to make Lemon Lime Cupcakes! Make sure to also check out the 2018 Pie Contest; tomorrow is the LAST DAY to submit and possibly win. Any ideas work, even if they are simple! Submit now!
Ingredients:
Cupcakes
- 1 1/2 cups flour, sifted
- 2 tsp baking powder
- 1 cup sugar
- 1/4 tsp salt
- 1/2 cup butter, softened
- 1 tbsp lemon zest
- 1 tbsp lime zest
- 1 1/2 tbsp lemon juice
- 1 tsp vanilla
- 1/2 cup milk
- 3 egg whites
Buttercream Frosting
- 3/4 cup butter, softened
- 3-4 cups powdered sugar
- 1 tbsp lime juice
- 1 tbsp lime zest
- 1/4 tsp salt
- 3-5 drops green food coloring
- Pre-heat the oven to 350 F. Then line your cupcake pan with muffin liners. (We had about 13.)
- In a bowl mix together your flour, salt and baking powder.
3. Then in a separate bowl, using a stand mixer or an electric mixer, combine together your sugar, butter, lime zest and lemon zest.
4. Then add in your egg whites, vanilla, and lemon juice.
5. Then turn your mixer to low and beat in 1/2 of your flour mixture. Then add 1/2 of the milk.
6. Turn your mixer back up to medium and and add the rest of your flour mixture and milk. Mix until fully combined.
7. Evenly scoop your batter into the muffins liners.
8. Bake for 16-18 minutes.
Once the the cupcakes are done remove them from the oven and let them cool. Meanwhile, begin making your frosting.
9. Beat the butter on medium until fluffy. Then turn to low and add 3 cups of powdered sugar.
10. Then add your lime zest, lime juice and salt. Then beat in the rest of your powdered sugar.
11. Add food coloring to preference. Mix until fully combined. Then pipe your frosting on the cupcakes, but first make sure they are cooled. We used a Wilton tip 1M.
12. Garnish with a small lime slice and indulge!
