Apple Cider Spice Pancakes

Aaah, breakfast, the most important meal of the day! Starting your morning with cereal, eggs, or yogurt can be nice for while, but get tiring after 1 week. Who feels the same way? 🙋‍♀️ It’s time for the breakfast of champs! If you’re not on the breakfast train, no worries, make em’ for brunch, or breakfast for dinner.

These pancakes are super easy and jazzed up with some fun toppings. Cinnamon glaze, homemade apple filling, and rolled in cinnamon sugar. Are these even pancakes or am I dreaming?

How to make the pancakes

Pancakes may be one of the easiest breakfast items, other than pouring cereal.

  1. Whisk together the batter and let it sit.
  2. While the batter sits, make the warm apple filling.
  3. Whisk together your glaze. Set aside.
  4. Pour the batter onto a warm saucepan and cook on both sides.
  5. Roll the warm pancakes in the cinnamon sugar.
  6. Top with apple filling, glaze, and goodies. Eat!

Ingredients You Need

  • Flour
  • Sugar
  • Baking Soda
  • Eggs
  • Apple Cider
  • Butter
  • Cinnamon
  • Apples (I used red apples)
  • Powdered Sugar
  • Milk

Tips for the best pancakes

  • Don’t let the pan get too hot, otherwise, the cooking time could change too much.
  • Use plenty of butter or oil in your pan. You don’t want the pancakes to stick, plus, who doesn’t love some crispy edges?!
  • Once bubbles appear on the top of the pancake, you’re ready to flip! Don’t let them burn.

Mix n Match Toppings

Now, these pancakes are topped with a glaze and apple filling, but you could really throw anything on there.

  • Syrup
  • Walnuts
  • Banana
  • Chocolate sauce
  • Caramel sauce

Taking the Shortcut

If you’re in a pinch but just can’t resist the look of these pancakes, there is a quick hack that will give you a similar result.

Instead of taking the time to make the batter, use a boxed batter, such as Krusteaz or Bisquick, and just substitute some apple cider for the water. This will give you that warm apple flavor in half the time!

You can still make the apple filling, or if you want to continue down the fast route (sounds like we’re playing The Game of Life) just top that stack with some canned apple pie filling.

But, I do recommend making the pancakes and going all out!

Starting your day off right is important and with these apple cider pancakes, you’re on your way to a good day.

Ingredients

  • Pancake Batter
  • 2 cups flour

  • 3 tbsp sugar

  • 2 tsp baking soda

  • 3 tbsp butter, melted

  • 2 eggs

  • 1 3/4 cup apple cider, cold or warm

  • Warm Apple Topping
  • 2 apples, peeled and chopped

  • 3 tbsp sugar

  • 2 tsp ground cinnamon

  • Cinnamon Glaze
  • 1 cup powdered sugar

  • 2-4 tsp milk

  • 1 tsp ground cinnamon

  • 1 tsp vanilla extract

  • Cinnamon Sugar
  • 1 cup sugar

  • 3 tsp ground cinnamon

Directions

  • Pancake Batter
  • Whisk together the apple cider, eggs, butter, and sugar in a medium bowl.
  • Add the flour and baking soda on top of the wet ingredients and mix. Set aside the batter so it can thicken.
  • Apple Topping
  • Add your apples, cinnamon, and sugar to a small pot. Cook on medium-low until the mixture becomes thicker and the apples are soft. Cover to keep warm.
  • Cinnamon Sugar
  • While the batter is still sitting, whisk together the cinnamon and sugar in a flat dish, like a plate. Set aside.
  • Cinnamon Glaze
  • While the batter is almost done sitting, whisk together your glaze ingredients in a small bowl. Whisk until smooth. Set aside.
  • Assembling the Pancakes
  • Now, add 1 tbsp of butter to a medium saucepan or skillet and bring to a medium heat.
  • Then, pour 1/4 cup of batter into the pan and cook for 1-2 minutes on each side. They are ready to flip when bubbles appear on top of the raw pancake batter.
  • Roll the warm pancakes in cinnamon sugar and top with glaze and warm apple filling. Continue this for the rest of your pancakes.
