Extra Gooey Lucky Charms Marshmallow Treats

St. Patrick’s Day is tomorrow and whether you thinks it’s a big deal or not, you need these extra gooey marshmallow treats. Plus, they bonus as spring treats because just look at those pastel colors. In my last post you might have heard me talking about a big snowstorm coming to Denver over the last few days and well, it’s here! You never know if you can trust the weather channel because sometimes they call for 2″ and it’s a foot, or a foot and it’s 3″. 🤷‍♀️ Anyway, they really were right this time and called for about 10-60″ across the front range (a large portion of Colorado) and in the city we ended up getting about 20″.

Enough snow talk, I know you’re here for the good stuff! These marshmallow treats are ultra gooey and the ultimate childhood treat. If I ever got one of these in a lunchbox, I knew it was going to be a good day. Gooey, sticky, and made with lucky charms marshmallows. Not the cereal, just the mallows! In fact you can buy a 1lb bag of them on Amazon, which I may or may not have done 😏.

why are they so ooey gooey and delicious?

Although there is a recipe on all Rice Krispies boxes, ours is a little spiced up with extra marshmallows and extra butter. I mean, can you really go wrong with that?

Adding more marshmallow and butter makes these treats so gooey and good. We’re not messing around here, I seriously added 2 bags of marshmallows for this recipe. That’s more than 10 cups of marshmallows!

Not to mention, they’re so unbelievably easy! If you’re not a baker and think you couldn’t attempt half of the things on this site, don’t worry. You can make these! Melt some stuff in a pot and stir in your dry ingredients. DONE.

items to have on hand

  • Rice Krispies cereal
  • Butter
  • Marshmallows
  • Vanilla extract
  • Lucky Charms marshmallows
  • 1 very large pot
  • 1 very large bowl
  • Spatula
  • 9×13″ pan
  • Non-stick spray

When I mean large pot, we’re talking big! You need enough space to add all the ingredients in and stir it, so make sure to use a very large pot and bowl.

Making these treats always remind me of being a little kid because it was such a a big deal to be able to have some of these and make them. For me, it was only a few times a year, so it was a big deal!

Making the treats is seriously so easy, hence why kids can even do it.

In a large bowl mix together Rice Krispies cereal and lucky charms marshmallows. (P.S. – this would be a good cereal combo. Might catch me eating it later. 😁)

Spray a 9×13″ pan with non-stick spray. Set aside.

Melt butter and marshmallow in a very large pot on medium heat. Continue to stir the whole time so it doesn’t stick and burn.

Once melted, add the cereal and luck charms to the marshmallow mixture and quickly stir to combine. Make sure all the dry cereal gets full coated.

Pour the marshmallow treats into the pan. Wet or grease your hands and press the marshmallow treats into the corners and edges of the pan making it even. Top with more lucky charms marshmallows.

Let it sit for at least an hour to set, then cut and enjoy!

Of course you could buy the lucky charms cereal and hand pick some of the marshmallows out of it, but why do that when a 1lb bag of just the mallows exists?! Thank you amazon!

I only used a portion of this bag, but it could definitely last quite long. Add it to other cereals, ice cream, pancakes… anything. However, don’t bake them because they’ll melt.

customize and store

Now, you can use the actual lucky charms cereal and marshmallows in place of the Rice Krispies, but I just preferred this.

Use other cereals, sprinkles, chocolate, or extra marshmallows.

After you’ve cut the marshmallow treats and you’re ready to store, add them to a plastic bag and store at room temp. You can also leave them in the pan and cover with plastic wrap.

The perfect way to celebrate Spring and St. Patrick’s Day is these marshmallow treats of course! Ultra gooey with extra butter and marshmallows, not to mention they’re the easiest snack (or treat) ever!

Ingredients

  • 2 bags of marshmallows (About 12 cups)

  • 6 tbsp butter

  • 5 cups Rice Krispies cereal

  • 3 cups lucky charms marshmallows

  • 1/2 tsp vanilla extract

Directions

  • In a very large bowl, mix together your cereal and lucky charms marshmallows. Set aside.
  • Spray a 9×13″ pan with non-stick spray or butter. Set aside.
  • In a very large pot, melt butter and marshmallows over medium heat. Continue stirring the whole time to make sure it doesn’t stick or burn.
  • Once melted, add the cereal mixture to the marshmallow mixture and stir to fully combined. Make sure all the cereal mixture is fully coated.
  • Pour the marshmallow treats into the pan. Wet or grease your hands and press the treats into the corners and edges of the pan to make them even.
  • Top with extra lucky charms marshmallows and let set at room temp for at least 1 hour. Then, cut and enjoy!
